I developed this easy beef birria consomé recipe for one of our readers. She told us that she discovered a Mexican dish listed on the menu of a restaurant and because she could not remember the name, she wondered if we did.

After listening to her explanation I searched for the restaurant online and found an updated menu. After a while we discovered the items she referred to was called beef birria tacos. After doing a bit of research I also discovered that this beef birria consomé is actually an ingredient of the beef birria tacos recipe.

What a great combination of Mexican flavours. All in one place. It took a few attempts to perfect this beef birria consomé recipe, bit as we all know, practice makes perfect.

  1. Sear the chillies on all sides in a heavy-bottomed frying pan over medium heat, 2 minutes. Add the boiling water and cook until tender, 20 minutes
  2. In the meantime, in another frying pan, sear the cumin seeds, coriander seeds, black peppercorns, cloves and cinnamon until fragranced. Remove and grind in a spice grinder
  3. Add the onion to the frying pan and fry until tender, about 5 minutes. Add the garlic and the spices you ground earlier. Cook until fragrance, about 2 minutes
  4. Add the paprika, tomato puree, oregano, allspice and vinegar, bring to a boil and turn off the heat
  5. Puree the soaked chillies, along with the soaked water, in a food processor until smooth
  6. Season the cubed beef with salt and pepper and add 1 tablespoon oil to a frying pan and brown the beef on all sies
  7. Add the pureed chilli sauce to the pan, along with the bay leaves and broth, increase the heat and simmer, covered, until the beef is come apart tender, about 2½ hours.
