Apricot Chicken Recipe
This quick and easy apricot chicken recipe has good childhood memories. I remember this recipe well, as a kid, growing up in a privileged home. We had a live-in domestic assistant who permanently did the cooking in our home. My mother had such a good relationship with her that she trusted her with most of the cooking, every day every night.
Except for this apricot chicken recipe. This is the only menu I can remember my mother cooking and the stand-out menu on special occasions, every special occasion. If you had to ask me, I would say, she did a fine job preparing this apricot chicken recipe.
I would not call my mom lazy. She was a hardworking mother who brought up two kids on her own. That takes courage. What I can say is this is the most delicious meal I know. for how ridiculously easy it is to prepare. Our domestic assistant strengths lied in curry. My mother's strength lied in this apricot chicken recipe.
I finally managed to get the apricot chicken recipe out of my mom and decided to share it with other single hardworking mothers. It is definitely a recipe they can use to impress their children.

Directions
- In a large frying pan, over medium heat, brown the chicken in the oil, on all sides
- Meanwhile, mix together all the apricot glaze ingredients
- Add 30 ml water to thin the glaze
- Carefully pour the apricot glaze over the chicken pieces
- Simmer over low heat until the glaze has reduced and the chicken is cooked through
- Serve with cooked rice and garnish with parsley. Enjoy.
