This easy banana bread recipe comes courtesy of my beautiful mother. This is a recipe I remember well since my childhood. We moved around a lot and thanks to this banana bread recipe, we always found ways to meet new people and to make friends. Everybody we knew or new people we met, always loved this banana bread recipe.

Before my wife and I got married, my mom shared a few of her sacred recipes with my wife, and this banana bread recipe was one of them. I still get emotional when I work in the garden on a Saturday and smell the magic aroma of this banana bread baking in the oven. It is the best time in the world to take a break and taste a slice of freshly baked banana bread spread with homemade farm butter, or as is.

My wife also always bakes this banana bread when we have a family gathering. it is a great gift to give and everyone in her family loves it when she hands out their banana bread. This banana bread recipe has made my wife the favourite aunt in the family.

Directions

  1. Preheat the oven to 180°C (350°F)
  2. Cream the butter and sugar in a mixing bowl until light and creamy
  3. Stir in the mashed bananas and beat to combine thoroughly
  4. Beat in the eggs, one at a time, and blend well
  5. Sift the flour and salt into the mixture and blend well
  6. Dissolve the bicarbonate of soda in the water and stir into the mixture, and then stir in the baking powder
  7. Pour the mixed banana dough batter into a greased bread tin and bake in the preheated oven until done, about 45 minutes
  8. Allow the baked banana bread to cool for a few minutes, then turn out onto a cooling rack to cool completely. Serve and enjoy!
