Beef Trinchado Recipe

This trinchado recipe is a tradition in our household. They say the best things happen by chance and the same can be said of this recipe. We are close friends with a Portuguese couple living nearby. They invited us for dinner one evening and decided to surprise us with this traditional beef trinchado dish.

It was love at first bite. The chips and Portuguese rolls served on the side complimented the dish really well. I begged them to share this trinchado recipe and they also gave me permission to publish this trinchado recipe on our website.

Trinchado is a spicy braised beef stew and is a very popular dish in Portuguese restaurants in South Africa. Trinchado is normally only accompanied by a crusty Portuguese roll, but most people we know serve it with fried chips, aka french fries.

Directions

  1. Add the butter and oil to a large frying pan over medium heat. When the butter starts to sizzle, add the beef cubes and fry until browned all over. Transfer the beef cubes to a plate and leave to cool
  2. Add the onions and chilies to the frying pan and cook until the onions are soft and glossy. Add the garlic and the flour and cook until the flour is fully combined
  3. Pour in the red wine and beef stock and stir until slightly reduced
  4. Add the bay leaf, olives, and beef cubes and increase the heat to a slow simmer. Season to taste with salt and pepper and cook, covered, for 1½ hours. Garnish with the parsley and serve hot, with chips (French fries) and Portuguese rolls on the side. Enjoy!
