Bruschetta Recipe

I decided to develop an easy bruschetta recipe as a token of saying farewell to three close friends. These friends all signed out of their current roles at the company I work for and decided to explore new ventures.

I was on a teams call with the organizer when I was asked for suggestions of what to prepare at the farewell ceremony. I immediately suggested bruschetta because it is ideal as a finger good and easy to prepare. It was agreed and I jumped into developing a good, quick, and easy bruschetta recipe.

Choosing the ingredients was made simple after sending out an email to ask if any of the attendees had any specific dietary requirements. I had a list to work with and decided on a meatless solution. Most of what I needed we already had in our vegetable and herb garden.

I picked a few tomatoes, basil leaves, onions (shallots) from our garden and everything else I need were in the kitchen. A few attempts later saw this bruschetta recipe rise to fame. It was the most popular item on the buffet table and everyone who attended asked me for the recipe.

Right there I decided to publish this bruschetta recipe. I was also told by our HR lady that I will need to attend all farewell celebrations in the future because of the popularity of this bruschetta recipe.

Directions

  1. Preheat the oven to 180 °C (350 °F)
  2. Arrange the baguette slices evenly on a baking tray. Drizzle with 2 tablespoons of olive oil. Toast in the oven until lightly browned
  3. Combine the tomatoes, onion, garlic, basil, vinegar, and remainder of the olive oil in a bowl. Season with salt and pepper. Spoon the tomato mixture onto the baguette and serve your bruschetta. Enjoy!
