My wife, the chef, had this butter chicken listed as an item on the menu in the restaurant she worked. It was a very popular item and especially loved by foreigners visiting their guest house.

A visit to the restaurant was also the first time I heard of butter chicken. I asked my wife for the recipe and we prepared the butter chicken one evening when we got home. I remember this Indian butter chicken recipe as the perfect winter's day companion. It was clod and wet outside, but we got comfort from the tasty butter chicken.

Yes, some people call it Indian butter chicken. If I could guess, I would say that the difference between butter chicken and Indian butter chicken lies in the spiciness. Indian butter chicken is spicier than the butter chicken we are used to.

What also works well when serving this butter chicken is to serve it with basmati rice. The combination of the basmati rice and the butter chicken makes for the perfect marriage between all the flavours.

Directions

  1. Combine the chicken, garlic, spices, and yogurt in a large bowl and cover
  2. Refrigerate 3 hours or overnight
  3. Melt the butter in a large saucepan, cook the chicken mixture for about 10 minutes while stirring. The chicken must brown lightly
  4. Add the vinegar, paste, puree, stock, cardamom, and cinnamon and bring to a boil
  5. Reduce the heat, simmer uncovered about 30 minutes. Stir occasionally until the chicken is cooked through
  6. Add the cream, stir until it is heated through and lastly stir in the coriander
  7. Served with poppadoms on a bowl of white rice
