Directions

  1. Cook the spaghetti in salted boiling water until al dente, according to the packaging instructions.
  2. In a mixing bowl, combine the egg yolks and parmesan until well incorporated and set aside.
  3. In a frying pan, cook the pancetta until crispy. Remove the pancetta and leave behind the fat.
  4. After the spaghetti pasta has cooked, reserve a quarter of a cup of the pasta water. Drain and rinse the spaghetti well under running water.
  5. Transfer the spaghetti to the frying pan with the leftover pancetta fat, and add the garlic. Toss over low heat for a minute or two then remove from the heat. Stir through the egg mixture and add a little of the leftover spaghetti water to emulsify the sauce.
  6. Season to taste with salt and pepper, add the pancetta, and toss to mix well.
  7. Serve with parmesan on the side. Enjoy!
