Directions

  1. Preheat the oven to 200°C
  2. Heat the olive oil in a large casserole. Spice the chicken pieces with salt and pepper and fry in the oil, over medium heat, until lightly browned. Remove and set aside.
  3. Add the garlic, onion, celery, carrots, leeks, and potatoes to the pan, and cook, stirring, for 5 minutes. Stir in the flour and cook until combined. Add the chicken stock, season to taste, and return the chicken pieces to the casserole. Add the rosemary and squeeze in the juice from the lemon halves.
  4. Cover the casserole and transfer to the preheated oven. Cook for 30 minutes until the chicken is cooking through and the sauce has reduced. Serve hot, with rice, or your choice of starch. Enjoy!
