Chicken in Red Wine Sauce Recipe

We were approached by a popular local glam magazine asking for a chicken in red wine sauce recipe. It is not a combination we were familiar with and had to think quickly, and out of the box.

The first thing we did was to make a list of ingredients that compliments chicken well. Then we decided on what chicken cuts are best to use. Then we decided on what red wine is best to use.

We tried Pinot grigio, sauvignon blanc, and then Chardonnay and tested this chicken in red wine sauce with all three variations. In the end, we settled down with Chardonnay. Chardonnay is a classically buttery, rich, and full-bodied wine which wine works well in preparing a creamy chicken dish or a pasta sauce.

We also tested an oven-baked variation against the stovetop variation and found the stovetop version of this chicken recipe worked best.

Finally, we presented the completed chicken in red wine sauce recipe to our tasting panel and were quite surprised by the great feedback we received. Months later they notified us in a beautiful letter that this recipe was a huge success with their readers.

Directions

  1. In a frying pan over medium heat, brown the bacon, then add the onions and the leeks. Fry for a few minutes, stirring frequently. Remove from the pan and set aside, leave the cooking juices in the pan
  2. Mix the flour, salt, and pepper together and coat the chicken pieces with the flour mixture. Shake off any excess flour. Bron the chicken pieces on all sides in the same frying pan
  3. Add the onions, and bacon back in the pan, then pour in the red wine and chicken stock
  4. Create a bouquet garnifrom the rosemary and thyme, or tie them together with kitchen string
  5. Place the remaining herbs, including the bouquet garni, in the pan
  6. Simmer on low heat for about 30 minutes, tasting and adjusting the seasoning as it cooks. The red wine sauce will thicken over time. Remove from the heat and allow the flavours to blend for about 20 minutes. Serve hot with cooked rice.Eds Note: If the sauce does not thicken to your liking, then you can also choose to add sour cream.
