  1. Mix together the icing sugar and condensed milk. Stir in the coconut and divide it in half. Using the food coloring, color one-half of the mixture pale pink and keep mixing until you have an even color
  2. Use cling film to double line a small plastic container and place the withe coconut ice in the bottom half, pressing it into a bar shape. Do the same with the pink coconut ice and press the white and pink firmly together
  3. Place in the refrigerator and chill for 2 hours or until firm, then cut into squares. Keep in an airtight container ideally in the refrigerator and use within 2 weeks. Perfect to make with children for school cooking projects or as presents.Dress them up in a glass jar or fancy box with a bow on top for a beautiful homemade gift.
