This cornish hen recipe has good memories. I remember becoming close friends with an English couple who moved to our town temporarily for business. I met them in a local pub, a place where you meet good people. The type of people they are.

They owned an estate and started a tradition we still follow, called open Sunday. Good music, food, and people. This is also the place where I first met this cornish hen recipe, prepared to perfection, fall off the bone tender chicken.

It is not hard to find small chickens in our town, the same as cornish hens, also known as Indian game. We often prepare this cornish hen recipe for our other English friends, and they love it. I also consider this cornish hen recipe as a healthier option than grilled chicken. Cornish hens have a lower fat content than chickens and are very lean. This means that Cornish hen meat is lower in calories than chicken.

Directions

  1. Preheat the oven to 220°C (425°F)
  2. Prepare the marinade by combining the marinade ingredients in a food processor. Pulse until it forms a rough paste
  3. Apply the marinade generously to the chicken
  4. Grill the chicken in a saucepan, over medium heat, until lightly browned on all sides
  5. Stuff the chicken cavities with the chopped onion and celery then squeeze the lime juice over the outside of the hens. Add the leftover lime skins to the cavities with the onions and celery. Season to taste with salt and pepper
  6. Place the cornish hens in an ovenproof baking dish and add the chicken stock to the sides. Bake in the preheated oven for one hour, basting with the chicken stock halfway through. Remove and serve. Enjoy!
