Flapjacks Recipe

The first time I tried this flapjacks recipe with blueberries was when I returned home after an extensive travel experience. I first laid eyes on these delicious flapjacks in a continental hotel I stayed in during my visits to the different cities. The blueberry flapjacks were listed as a breakfast menu item on the hotel menu.

I returned home on an early Saturday morning and stopped at the supermarket to pick up flowers for my girlfriend as well as a box of chocolates. The flour range was next to the chocolates in the aisle and my eye caught a glimpse of the ready-mix flapjacks flour packet.

Being a home cook I naturally ignored the flour mix and bought a packet of all-purpose flour instead, as well as a punnet of fresh mixed berries, containing an assortment of blueberries and other berries. I decided to surprise my girlfriend with a homemade flapjacks recipe.

The rest is history as they say. The flapjacks turned out to be so good my then-girlfriend insisted to get married. That is the effect this flapjacks recipe had on her. It soon became a tradition and we had the flapjacks every time I returned from a business trip. I always looked forward to returning home to my girlfriend and the homemade flapjcaks. This flapjacks recipe is so easy, even she could make it in her pyjamas.

  1. Sift the flour, sugar, baking powder, and salt together. Whisk the buttermilk, eggs, vanilla, 1 tablespoon butter, and 2 tablespoons oil together and whisk into the flour mixture then fold in the blueberries. Set the batter aside for now
  2. Heat ½ a teaspoon of the butter and remaining 2 teaspoons oil in a large nonstick frying pan over medium heat. Pour in ? cup batter. Cook until small bubbles form on the surface, about 3 minutes. Flip
  3. cook until golden brown, about 3 minutes. Repeat with remaining batter, adding butter as needed. Serve with butter and syrup and garnish with the blueberries. Enjoy!
