Directions

  1. In a large bowl, whisk the flour and baking powder together
  2. Stir the butter, milk and egg yolks together in a mixing bowl
  3. In another bowl beat the egg whites with a hand mixer until fluffy
  4. Combine the milk mixture and flour mixture together, using a spatula or wooden spoon. Fold the beaten egg whites in to combine. Your fluffy pancake batter is ready
  5. Heat a little ooil in a frying pan over medium heat. Pour 1 ½ cups of batter into the pan and cover with a lid. Cook until the bottom turns golden brown and test with a toothpick. Tranfer to a plate. Repeat the process until all of the batter has been used up. Stack your pancakes and serve with syrup or honey. Enjoy!
