This green bean stew is very popular all over our Country. I assume it is popular because of the abundance of both green beans and lamb or mutton all year round. We usually prepare this green bean stew outdoors over coles in a three-legged pot. It is a social time with good memories and the family and kids also enjoy taking part in preparing the green bean stew.
This is a basic green bean stew recipe with many variations and possibilities. Different people try different things, such as adding wine or maybe flavoured soup packets, and different types of vegetables. One addition that I know works well is adding mixed herbs near the end of the cooking process.
This green bean stew recipe comfortably yields 6 portions and it freezes well if you leave out the potatoes. I will also recommend not cooking the green bean stew again after freezing. It is best to thaw the stew, then heat it in a microwave. If you prefer to cook it again, first add a little water before cooking and only simmer, do not boil.
Whether you choose lamb or mutton as the meat in this recipe, is completely up to you. I suggest trying both variations and testing which one works best for you. In both cases, I recommend skimming as much of the scum and fat off the top while cooking.
Removing the scum makes it easier to control the temperature of the pot so you can maintain a constant simmer. If you don't skim it off, the scum aggregates in a foamy layer on the surface, which acts as insulation. It traps more heat in the pot and can cause your pot to boil when it would otherwise be simmering
