Lamb Curry Recipe

This is the best lambcurry recipe I have tried and tested, in my own opinion. We always enjoy this lambcurry on special occasions, that is how good it is. This is the first recipe that comes to mind whenever my wife, or I, celebrate our birthdays. My mother turned 80 years old this year, and guess what she asked for? Of course, you guessed it, lamb curry. My lambcurry recipe.

We grew up in Durban, KwaZulu Natal, and had many Indian friends. What good and great people they are. It takes time to win someone's confidence, especially asking someone to share a sacred recipe. I guess my mom asked for this recipe from one of her many Indian friends. Being a great cook herself, she adopted the recipe to suit our enjoyment. it works and always has.

This lamb curry recipe is so good, my wife, who is a professional chef, still uses it to impress International guests, arriving and eating at the guesthouse where she works. The guests always compliment my wife after eating this lamb curry.

It is also quite easy to prepare this lamb curry recipe, even I can do it and I am not a professional chef. This recipe is well known in our family and floats around in most homes across the country.

Directions

  1. Preheat the oven to 160°C
  2. Heat the oil and butter in a large frying pan and fry the lamb goulash and onions until golden brown
  3. Combine the stock, salt, curry powder, turmeric, coriander, raisins, coconut, sugar, and cinnamon in a mixing bowl
  4. Transfer the fried lamb goulash and onions to a large ovenproof casserol and pour the curry mixture over
  5. Bake, covered, in the preheated oven until tender. About one hour
  6. Mix the cream, cornflour, and brandy together in a small saucepan and simmer over medium heat, stirring all the time, until thickened,
  7. Pour the sauce over the cooked lamb and serve with cooked Basmati rice. Enjoy!
