Lamb Noisette Recipe

This lamb noisette recipe is our family's favourite Thanksgiving recipe. We used to do turkey over Thanksgiving and lamb noisette as an alternative to those in the family that do not prefer stuffed turkey. It quickly overtook turkey as the favourite and till this day, we only prepare lamb noisette over Thanksgiving.

I personally think the reason why our family prefers lamb noisette is because of the juicy, tasty noisette cuts of the lamb. The meat is tasty and the children in our family love it.

Noisette (which means hazelnut in French) is a small round piece of lean meat, especially lamb. It is the leanest lamb cut. The bread stuffing used in this lamb noisette recipe is the same bread stuffing we used to use with the roast turkey or chicken. It is a classic bread stuffing with onions and sage and works well with the lamb noisette.

Directions

  1. Preheat the oven to 180°C (356°C)
  2. On a clean surface, spread the lamb breasts, noisettes out flat and season with salt and pepper
  3. Combine the bread stuffing, beaten egg, apricots, red peppers and onion in a mixing bowl and spread evenly over the lamb noisettes
  4. roll the lamb up, tying it securely with kitchen string/twine at regular intervals
  5. Cut each breast into three even rolls (noisettes) and brush each with melted butter
  6. Roast on a baking train in the preheated oven for one hour
  7. Brust the noisettes with melted honey and roast for another one and a half hours
  8. Serve straight away on a bed of vegetables
