Directions

  1. Preheat the oven to 150°C
  2. In an ovenproof frying pan, heat the olive oil over medium heat. Coat the lamb shanks in flour, shake off the excess flour, then fry until browned on all sides. Remove and set aside
  3. Add the onion, celery, carrot, and garlic to the frying pan and fry until soft and slightly browned, stirring all the time
  4. Add the peppercorns, bay leaf, thyme, and rosemary sprigs. Pour in the chicken stock, increase the heat and bring to a simmer
  5. Season to taste and place the lamb shank on top of the vegetables
  6. Cover and place in the preheated oven and bake for 2½ hours, until the meat is succulent and falls off the bone. Remove the bay leaf and serve with side vegetables and gravy. Enjoy!
