This quick, and easy lemon syrup recipe is tremendously popular. The lemon syrup is a lemon-infused syrup that adds a myriad of flavors to anything it's stirred into or drizzled over.

It's ridiculously easy to make and it adds both sweetness and a lemony kick to cocktails and desserts. When we think syrup we usually think sweet, but who would have thought lemon syrup can taste this good?

lemon Syrup compliments anything from pancakes to waffles and can be used as a base for lemonade and lemon cocktails. It freezes well and can last in the fridge for a long time. The chances are you will use most of the lemon syrup before it has time to go bad.

Directions

  1. Use a vegetable peeler to remove the zest from each lemon. Set the zest aside
  2. Cut each zested lemon in half and juice them, until you have more or less 125 ml of lemon juice
  3. In a saucepan add the lemon juice and then the sugar, simmer over low heat for 10 minutes until slightly thickened
  4. Add the lemon zest you set aside. Remove the saucepan from the heat and allow to cool for at least 20 minutes
  5. Remove the zest using a slotted or skimming spoon
  6. Strain the lemon syrup through a sieve
  7. Use on pancakes or waffles while it is warm, or bottle and place in the refrigerator. Use the lemon syrup in lemonade or cocktails when it has cooled. Enjoy!
