This quick and easy mussel and white wine soup is a signature dish in our home. Whenever we visit the West Coast, one of the first things we do is go mussel picking. It is a fun family event, and even the children enjoy it.
You do not have to use fresh mussels in this mussel and white wine soup recipe, you can also use frozen mussels. The taste is just as good, but it is more fun using fresh mussels you picked and cleaned yourself.
Mussels are good for you. Mussels keep your heartbeat regular, lower blood pressure, and help blood vessels work as they should. Mussels are rich in the marine Omega-3s, EPA and DHA. If you are trying to lose weight, mussels give you a lot of nutrition without a lot of calories. Prepare the mussels in a way that does not add calories
As for the white wine used in the mussel and white wine soup, we decided to go with a good quality Sauvignon Blanc. There are a myriad of great white wine choices but we tend to favor pinot grigio or sauvignon blanc. These lighter-style wines will bring out the flavor of your mussel and white wine soup without overwhelming it. Avoid robust and oaky white wines like chardonnay. Once the food is cooked, the oak influence may cause your dish to taste bitter.
Put the healthy mussels and the quality white wine together, make a soup and you have a healthy lunch or dinner treat.
