This mussels in white wine sauce recipe have very good memories. I clearly remember the first time my wife, a professional chef, prepared this recipe for us, as well as a few other people.

We were nearing the end of our honeymoon in the picturesque St Helena Bay on the West Coast of South Africa. On the last day, we spent the evening with my Cousin, her husband, and her children, in Paternoster. The Western Cape is popular for many reasons, one of them being the abundance of mussels you can pick off the rocks. This is if you are in possession of a valid permit.

My Cousin's husband had the necessary paperwork, so we all set off to the beach and picked quite a few good-sized mussels. Initially, our intention was to bbq, braai, the mussels.

My wife discovered a bottle of white wine and without hesitation found a pot and the necessary tools to prepare mussels in white wine sauce delight. It was so good, most of us opted in for a second, and even third serving. We never got to the other food we planned to eat.

As far as the white wine goes, you cannot go wrong with Sauvignon Blanc. Arguably the most versatile wine for marinades, seafood dishes, and veggies, this white's pronounced acidity and herbal notes are sure to add depth and zest to everything from stews to Italian dishes.

Directions

  1. Place the mussels in a mixing bowl, pour the water over and set aside
  2. Heat the butter in a saucepan and sauté the onions until light and translucent
  3. In another saucepan, heat the milk and stock cubes together until all the cubes have dissolved
  4. Sprinkle the flour over the onion and butter mixture and remove from the heat
  5. Gradually stir in the milk mixture
  6. Stir until smooth and return to the heat
  7. Add the remaining ingredients, except for the wine
  8. Add the mussels and water
  9. Stir until the mixture comes to a boil, then reduce the heat to a simmer
  10. Simmer until the soup is flavoursome
  11. Add the white wine and simmer for another five minutes
  12. Add the lemon juice and curry powder if it is a bit bitter
  13. Season well with salt and pepper
  14. Sprinkle with parsley and serve straight away
