I dedicate this easy potato bake recipe with cream to a very special lady in my life. Her name is Lettie van der Merwe. Se played an important role in my life, at a time when I needed a mother most.

I am sure this is the same time I was introduced to potato bake recipe with cream. I stayed and grew up in so many homes, that I lost count, but I remember one home vividly, the home of tannie Lettie. Her house was a place where everybody felt comfortable, and unconditional loved, a place where everyone could be themselves.

Tannie Lettie prepared many special recipes of which this potato bake recipe with cream recipe is one of them. For some reason, I make a connection between her and this delicious recipe. I have forgotten about this recipe, but when I saw it years later, I remember the special occasions she enjoyed preparing this potato bake recipe with cream recipe.

Directions

  1. Preheat the oven to 180°. Cut the garlic clove in half, and rub around the inside of the serving dish
  2. Butter the serving dish well.
  3. Crush the remaining garlic into the milk and cream mixture and heat it in a large saucepan
  4. Add the pepper, nutmeg, cayenne pepper and the sliced potatoes. Stir constantly to prevent the potatoes from sticking. Simmer for 1-2 minutes until the liquid thickens perceptibly, then remove it from the heat
  5. Stir in the cheese
  6. Pile the mixture in the dish and push the potatoes down in the liquid so they are not sticking out. If using cheese, sprinkle on top (also sprinkle garlic chives on top if using) and bake for 45 minutes to 1 hour until the top are golden brown and the potatoes are tender, Serve hot and garnish with chopped chives. Enjoy.
