Roast Lamb for Christmas Recipe

Roast Lamb for Christmas is a tradition in our family. Every year, over Christmas time, we take turns to prepare this roast lamb for Christmas recipe. It is so easy to do, even my husband gets his turn every now and again. We love this recipe, especially over thanksgiving. This roast lamb for Christmas has great memories.

I remember when I was little and I still believed in Santa clause and all the great stories around it. I always got very excited around Christmas time and I still connect that excitement to the smell of this roast lamb for Christmas in the oven. Until this day, when I smell it, I can see my mom and grandma standing in the kitchen. Chatting, drinking a glass of funny-smelling stuff. Now I know that stuff is called sherry. They were so ashamed of drinking, they hid the sherry in a cupboard in an empty box of washing powder. At least the sherry had a laughing effect. They would giggle when they see me come into the kitchen. 

It was my father who was responsible for cutting the roast lamb once it was cooked. I remember, he once got an electric carving knife for Christmas as a gift from a friend. When he opened the present he laughed and said, why did I not have this before cutting the roast lamb? 

Those were the days and we still laugh at that joke every Christmas. We all now own electric carving knives as a precaution to the embarrassment my father felt that day.

Directions

  1. Preheat the oven to 200° Celsius
  2. Using a small, sharp knife, cut slits all over the leg of lamb. Insert 1-2 garlic slices and 4-5 rosemary needles into each slit
  3. Add all remaining rosemary in the roasting tin
  4. Season the lamb to taste with the salt and pepper and place it in the roasting tin. Pour the oil over and cover the roasting tin with foil
  5. Roast the lamb in the preheated oven for approximately 1½ hours
