When a reader approached me for a good shrimp pasta recipe, I was a bit taken aback. I thought to myself, there are so many pasta recipes, not another one. I was pleasantly surprised to learn they need this shrimp pasta recipe for a food column in a magazine.

At that point, I realized it could mean good publicity to our food blog, and the recipe will have to be good. So, I set all other tasks I was working on aside and concentrated on developing this prawn pasta recipe. It took many attempts to get the balance right. They were looking for something between the Mediterranean and smelling the fragrance of the ocean.

After I presented three test variations of this recipe to my reader's panel of expert tasters, they informed me this shrimp pasta recipe is by far the best and most popular. Months later I also learned that this seafood pasta recipe was a huge success with their readers. The feedback was good.

As far as the white wine goes in this shrimp pasta recipe, you cannot go wrong with Sauvignon Blanc. Directions

  1. Cook and drain the pasta well, according to the packaging instructions. Reserve a bit of the pasta water for later
  2. Add 1 tablespoon olive oil to a frying pan and fry the shrimps on both sides until they turn pink, about 2 to 3 minutes. Remove from the pan and drain on paper towels
  3. Add 1 tablespoon olive oil to the same frying pan and fry the onions, garlic, oregano and red pepper over medium heat for about 2 minutes, stirring frequently. Add the white wine to the pan and scrap up the pieces from the bottom to blend with the wine. Reduce the wine by cooking for 1 to 2 minutes, then add the lemon zest and juice
  4. Add the chopped tomatoes and parsley and toss about for 2 minutes, until coated
  5. Add very little of the reserved pasta water, about 2 tablespoons
  6. Add the cooked pasta to the pan, and toss to coat. Season with salt, to taste
  7. Add the cooked shrimp to the pan and toss about for 40 seconds. Remove from the heat. Serve and garnish with a little parmesan cheese, and black pepper. Enjoy!
