I decided to share this snoek braai recipe by telling you a quick story. There is a war raging in South Africa between the North, and the South. I am not able to tell you who started the war, but I can tell you what the war is about. Snoek and this war have been raging for centuries.

The North claim, they are the best snoek braaiers, the South, where the Snoek, actually come from, claim, they are the best Snoek braaiers. It is like watching a rugby game between the Blue Bulls, and the Stormers. Both teams are evenly supported, but both team supporters, believe their team is the best. This already leaves a bitter taste between the two sides. Now a fish, called Snoek, has also come into the equation.

The reason why I share this snoek braai recipe is that I hope it will bring peace between the North and the South. Taking a stand, on neutral territory, maybe this snoek braai recipe will become so popular, that both sides start to believe, that neither is the best snoek braaiers, this recipe is the best.

Well, this recipe does take a neutral stand. The editor comes from the north, the person who is writing this comes from the South, and the Snoek also comes from the South. The ingredients themselves come from wherever you are.

Ingredients

Directions

  1. Combine all the ingredients, except the black pepper in a microwave-proof measuring jug
  2. Microwave, on full power, for two minutes
  3. Remove and stir well to combine
  4. Prepare a large sheet of foil on a wark surface, shiny side down. Place the snoek, skin side down, in the centre of the foil
  5. Using a basting brush, spread the apricot sauce, that you microwaved earlier, evenly over the snoek. Use as much of the apricot sauce as you can. Work the sauce into the cracks of the snoek flesh
  6. Arrange the onion and tomato slices evenly over the snoek surface. Frind a little black pepper over the tomato slices
  7. Wrap the snoek in the foil and put it in the braai grid with the skin side down. Grill over the hot coals, for about 10 minutes per side, skin side first. Unwrap the foil to check if the flesh has turned brown, if not, braai for another few minutes on the flesh side. Serve with mashed sweet potato and roosterkoek, with apricot jam. Serve with lemon wedges on the side. Enjoy!
