This is a quick easy soft polenta recipe. The trick is to make the polenta in the microwave instead of the stovetop. The polenta recipe yields two good-sized portions, but you can adjust it to the portions of your choice. 

Adding the butter is optional, but it helps to keep the polenta soft after cooking, while the polenta cools down. The polenta will become stiffer, the longer it stands or cools, so the best is to serve this polenta straight away, after preparation.

  1. Combine the polenta and water in a deep microwave-proof dish and stir well using a wooden spoon
  2. Place the dish in a microwave and cook for 10 minutes on 100% power
  3. Add the butter and salt and stir well, folding the sides in, to make sure you blend in the drier parts
  4. Allow to stand for two minutes before serving, Enjoy!
