This taco soup recipe is perfect for any season. Our family loves soups and we always find a reason not to wait for winter before we enjoy our soups, we love this taco soup all year round.
We do not have children of our own, but when our nephews and nieces visit they often ask for this soup. They have a special name for this soup and call it very fittingly, Mexican soup.
One of our best holidays ever was to Mexico. My wife and I both own a sombrero, Mexican hat, and we always wear it when we prepare Mexican or Spanish dishes, especially when making this taco soup recipe because it was in Mexico where we first got introduced to taco soup.

Directions
- In a large saucepan over medium heat, brown the beef, add the onion and green pepper and cook for a further five minutes, stirring frequently
- Stir in the water, beef stock, kidney beans, tomatoes, sweetcorn, and taco seasoning mix. Adjust the heat to a simmer and simmer for 15 minutes
- Ladle into soup bowls and sprinkle with the tortilla chips and serve with the desired topping. Apple slices are a good combination. Enjoy!
