  1. In a large saucepan over medium heat, melt the butter. Add the onions and the garlic and cook, stirring frequently, until the onions are soft and glossy
  2. Add the tomatoes, salt and pepper, and chicken stock and increase the heat to a simmer. Cook for 20 minutes, or until the tomatoes are soft
  3. Transfer the soup to a food processor or blender and blend until soft. Transfer back to a saucepan and cook until heated
  4. Garnish with basil leaves and add bruchetta on the side. Serve and enjoy.
