  1. Prepare the filling
    Combine the sliced apples, sugar, lemon juice, vanilla extract, and nutmeg in a mixing bowl and mix well.
  2. Prepare the sweet crust pastry
    With a rolling pin roll out the larger ball of pastry into a 12-inch (3m cm) round to make a bottom crust for a 9-inch (21 cm) pie pan. Ease it into the pan, pressing it down gently, but firmly. Evenly sprinkle the bottom of the pie shell with the bread crumbs. Fill the crust generously with the apple mixture, spooning it in with a slotted spoon so as to drain off any excess liquid.
  3. Dot the layers of apple with the butter pieces. Roll out the remaining pastry ball into a 10-inch (25 cm) round for the top crust. Brush the rim of the pie shell with cold water, put on the top crust, and trim, seal, and crimp the two crusts.
  4. Cut pie vents into the top crust to allow steam to escape.
  5. Preheat the oven to 425°F (220°C)
  6. Prepare the egg wash: Beat the egg and cream together in a small mixing bowl using a fork. Lightly brush the top crust with the egg wash. Bake the apple in the preheated oven for 45 minutes, or until the crust is golden brown.
  7. Cool completely before cutting and serving. Enjoy!
