This black magic cake recipe has been shared with us by one of my dearest and longest friends, whom I have known since my early teens. Her name is Louise van Wyk and we attended secondary school together and we remain friends to this day. It shows how good food is a great way to keep people connected. . The secret to this black magic cake recipe is that it uses all of the typical cake batter ingredients; eggs, sugar, flour, butter and milk, but the cake's unique baking process naturally, or magically results in three distinctly textured layers. While the top is light and spongy, the middle becomes soft and custardy and the base turns dense and rich. Black magic! We use Mocha as the frosting, because it is the best. In this particular magic cake recipe, the distinct flavours are introduced by coffee, cocao, luqueur, and the unique Mocha frosting.

  1. Prepare the Black Magic Cake
    Preheat the oven to 350°F (180°C)
  2. Flour and great to 9-inch (21 cm) roound baking tins. Stir together the sugar, four, cocoa, baking powder, baking soda, and salt in a mixing bowl. Add the eggs, buttermilk, vanilla, coffee, and oil. Beat on medium speed for 3 minutes and pour the batter evenly into the two prepared baking tins. Bake in the preheated oven for 35 minutes and test with a skewer. It should come out clean. Remove from the oven and transfer to wire racks to cool completely. Prepare the Mocha Frosting
    Melt the butter in a saucepan over low heat and stir in the liqueuer, cocoa, and butter, until well combined. Remove from the heat. Gradually add the powdered sugar until completely combined. Add a little warm water if needed.
