Use this traditional harissa recipe whenever a recipe calls for harissa. This is an ancient harissa recipe that I found while doing a lot of research about African cooking. Harissa is a hot chilli pepper paste with the main ingredients being roasted red peppers, peppers, spices and herbs such as garlic paste, caraway seeds, coriander seeds, cumin and olive oil to carry the oil-soluble flavours.

Directions

  1. Please the chilli peppers in a bowl and cover them with hot water. Leave for 30 minutes.
  2. Transfer the chilli peppers to a food processor.
  3. Add the garlic and all the remaining ingredients and blend until smooth.
  4. Adjust seasoning by adding salt to taste.
  5. Serve and enjoy!
