Homemade Eat-Sum-Mor Recipe

I dedicate this easy homemade eat-sum-mor recipe to my lovely wife. She is addicted to eat-sum-more shortbread biscuits and to save money, I decided to develop a quick and easy homemade eat-sum-mor recipe to surprise her. It was a huge success and I now bake these shortbread biscuits every weekend.

My wife also hands these eat-sum-mor biscuits out at work whenever somebody celebrates their birthday. It is a hit at home and work and not only with adults, kids love them too. I now generate a good secondary income eat-sum-mor, as well as these homemade gingerbread cookies.  It is rightfully said that most good things happen by accident.

Directions

  1. In a mixing bowl beat the icing sugar and butter until light and fluffy
  2. Slowly add the flour until it forms a dough
  3. Preheat the oven to 160°C (1320°F).
  4. Line a shallow baking tray with baking paper and roll out the dough to about 1 cm in thickness. Cut into bite-sized squares, or desired shapres, and bake in the preheated oven for 20 minutes
  5. Allow to cool before serving. Enjoy!
