  1. Add the berries, castor sugar, and vinegar to a saucepan and fry over medium heat until the sugar has dissolved. Bring to the boil and simmer for 1-2 minutes. Stir in the chia seeds and remove from the heat
  2. Fry the ostrich fillets in the olive oil and butter until just done. Season with salt and pepper
  3. Arrange the salad leaves, mangetout, and cherry tomatoes on each plate. Arrange the fried ostrich fillet strips on top of the salad leaves and drizzled with the hot berry dressing. Serve and enjoy!
