This easy turkey with fried rice recipe is the brainchild of my darling chef wife. She is a master at rotation of stock recipes and gave birth to this recipe after Christmas or Thanksgiving as some would call it. We had a lot of leftover turkey after our Christmas celebrations and ran out of ideas of what to do with the leftover turkey.

  1. Melt the butter in a large frying pan over medium heat and sauté the onions and green pepper until the onions are soft and glossy
  2. Add the rice and cook for 2 minutes, stir in the chicken stock, cover, and cook for 10 minutes
  3. Stir in the turkey, mushrooms, and tomatoes, season with salt and pepper, and simmer for another 10 minutes. Serve at once. Enjoy!
